Triple Berry Baked Oatmeal

Triple berry baked oatmeal. This quick and easy berry oatmeal bake is going to be your new favorite breakfast.

I have a slight problem. I’m breastfeeding and struggling to produce enough. One of the things that helps is oatmeal. But I can only eat so many of those little packets. So I’ve been experimenting with different ways to make oatmeal. And stumbled across this berry version that I’m in serious love with.

This dish is made the morning you’re eating it. If you’re looking for an overnight breakfast casserole, check out my Sioux Falls Soufflé.

The original version of this recipe is on Julie’s Eat & Treats. I’m going to be honest…hers is the healthy version. Mine is the “uses ‘regular’ ingredients and adds brown sugar” version. Notes about Recipe

Oats- make sure you use the old fashioned variety. Not the 1-minute or overnight oats. Neither one will bake well in this.

Berries- I use strawberries, blueberries, and blackberries. I especially love the blackberries! But you can substitute raspberries if you would like.

Milk- I use either 1% or 2%, whichever is in the house. I’ve also substituted vanilla oat milk (I’m drinking it because I’m trying to boost my milk supply.). If you use vanilla oat milk, I would add slightly less vanilla extract.

Butter- completely optional. I’ve made it both with and without. And honestly can’t tell the difference. I included it in case your “taste” is a bit more sensitive than mine. Plus, butter makes almost every baked dish taste better…haha.

Triple Berry Baked Oatmeal

Prep Time 20 minutes minutes
Cook Time 50 minutes minutes

Ingredients

  • 4 & 1/2 C. old fashioned Quaker oats
  • 2 & 1/2 tsp. baking powder
  • 3/4 C. light brown sugar
  • 4 C. strawberries halved
  • 1 & 1/3 C. blueberries
  • 1 & 1/3 C. blackberries
  • 3 eggs
  • 2 & 3/4 C. milk
  • 2/3 C. maple syrup
  • 1 Tbsp. vanilla extract
  • 2 Tbsp. unsalted butter optional

Instructions

  • Mise en place. Preheat over to 350°. Lightly grease a large glass baking dish.
  • Wash and prep berries. Combine in a large bowl. Set aside.
  • Combine oats, baking powder, and brown sugar.
  • Crack eggs in a medium bowl. Beat lightly. Mix in milk, maple syrup, and vanilla extract.
  • Pour half of oat mixture in bottom of baking dish.
  • Top with half of the berries.
  • Top with remaining half of oat mixture.
  • Slowly pour liquids over top. If using butter, melt. Drizzle over top of mixture.
  • Using a spoon, press down in about a dozen places, wiggling spoon lightly back and forth, making sure the liquid soaks in everywhere.
  • Add the remaining berries on top.
  • Bake, uncovered, 45-55 minutes, until oats are tender and the mixture is set.

    I’ll start by saying I hate oatmeal for breakfast but love a fruit crisp. This seems the best recipe for me. Does this reheat as a leftover? Is it better to decrease the recipe and make daily?

      It reheats great for 2 days. After that, the edges start to get really hard.

      I haven’t tried. I know from personal experience, frozen berries release some extra liquid so maybe reduce the liquid a bit? Just a guess. Let me know if you try it! I would love to share with the readers whether it works or not.
